Hacienda Maria: Coconut tree, considered as the “tree of life”, were planted by the people in the area, for copra purposes. With the vast coconut plantations on this 14 hectare land, the community people made use of the coconut sap which is known as “tuba”.
“Tuba” which is collected daily is then steamed in a metal cylinder to create stronger and “somehow” commercial liquor- Lambanog similar to gin or vodka.

The process may take 9-12 hours but the finished product is amazing. The locals were taught also how to infuse fruit flavors in lambanog such as pineapple, raisins and pandan, making it more appealing. The Russians, who are the primary tourist market of Hacienda Maria, are loving it.
